The development of a healthy nut nutrition strategy and the development of nut processing are the links of one chain.

HEALTHY NUTRITION is, first of all, a real possibility of increasing the general level of human health and duration of quality life, significantly reducing the medication burden, and rapid rehabilitation for our defenders-warriors. Therefore, to introduce useful nut processing products into the regular diet, to make their daily use the norm for everyone, is an important social task, which is currently being undertaken by the specialists of the Ukrainian Nut Association in cooperation with the professionals of the NUHT

ESTABLISHMENT OF HEALTHY NUT NUTRITION STRATEGY and DEVELOPMENT OF NUT PROCESSING - LINKS OF ONE CHAIN.

Today, even a lazy person knows about the benefits of eating walnuts and hazelnuts. And how much has been written and rewritten about the benefits of nuts for health. Because according to the World Health Organization, 80% of all diseases are related to food to one degree or another. Therefore, it is pleasing that for many PEANUTS are becoming an increasingly necessary and necessary product in the diet of HEALTHY NUTRITION.

Do the math for yourself: 100 grams of walnuts contain approximately 47 grams of polyunsaturated fatty acids (of which 9-10 g are miraculous Omega-3) – these are healthy fats that prevent heart disease.

Next: 15 grams of protein, of which 2.5 grams of BCAA - a group of amino acids, 7 grams of fiber - this is the prevention of diabetes and digestive problems.

Even further: A large number of antioxidants that protect the body from the destructive effects of free radicals and help fight cancer. With a base value of 3,000-5,000. units on the ORAC scale, walnuts have -13000 ORAC/100g, hazelnuts - 9600.



The presence of a large amount of vitamins B1, B6, magnesium, zinc and others in the composition of nuts provides numerous benefits for human health. The list can be extended.

In turn, the rapid growth of walnut and hazelnut orchards that grow varietal, high-quality nuts (without aflatoxins, without lead, which roadside nut trees suffer from) allows us to saturate our diet with really HEALTHY NUTS.

Nuts are indeed an important, but still only a separate product in a healthy diet. Proper nutrition: this is not for the short term - in order for the body to work stably well, you need to monitor what you eat constantly to ensure normal development and vital activity.

Therefore, enriching the diet of healthy food with products of nut processing: oil, flour, etc. is the most logical step for this.

But in order to raise the need for a healthy diet using nut products to a new level, systematic work is needed to popularize not only nuts themselves, but also to expand the formation of the principles of healthy cooking with the use of nut processing products in various dishes, the creation of food recipes using nut processing products, recipes for industrial use of nut flour and oil.

Separate steps are being taken for this. In Ukraine, there are already manufacturers engaged in the production of nut oil, culinary delicacies with nuts. As a rule, they operate at limited local levels and are not systemic in nature.

And for the formation of the ideology of healthy nutrition with the use of nut products, the formation of a strategy of healthy nut nutrition in the general system of HEALTHY NUTRITION, a scientific justification of the need and feasibility of using nut oil and flour among a variety of food ingredients is required.

The Ukrainian Nut Association plans to carry out this important task in cooperation with the flagship of the food industry - the NATIONAL UNIVERSITY OF FOOD TECHNOLOGIES (NUHT).

Today, NUHT is a powerful educational and scientific complex, known and deeply respected not only in Ukraine, but also far beyond its borders. About 25,000 students and trainees are currently acquiring knowledge in it. More than 150 doctors of science and professors, more than 480 candidates of science are involved in the educational process. Among them are 21 members of the National Academy of Sciences of Ukraine and branch academies, 19 laureates of the State Prize of Ukraine, 16 honored figures of science and technology and honored education workers.

On March 22, a MEMORANDUM on partnership and cooperation between the National University of Food Technologies and the Ukrainian Nut Association was signed.

The signing of the Memorandum took place in the office of the rector of NUHT, Professor, Doctor of Technical Sciences Oleksandr Yukhimovych Shevchenko, in the presence of the head of the Department of Bakery and Confectionery Technology, Professor, Doctor of Technical Sciences Volodymyr Mykolayovych Kovbasa.

On behalf of the Ukrainian Walnut Association, the president of the association Yudin Hennadiy, members of the Presidium of the association - director of the agrofirm "Svitanok", doctor of technical sciences Oleksandr Ivanovych Kolisnyk (Kharkiv region, the largest walnut orchard in Ukraine (180 ha), grown according to the Organic Standard system), manager of the development of processing and export of the Walnut Association Kabakov Dmytro Anatoliyovych.

At the signing of the Memorandum, the organic nut oil of AF "Svitanok" was presented, which was produced for the first time in Ukraine in the organic "chain" of an industrial nut garden - a processor. Nut oils produced by producers-members of the nut association from Vinnytsia, Dnipropetrovsk, and Rivne regions were also presented.

In addition, the association handed over to the University the first two volumes of the latest edition of the "Walnut" book series, authored by a well-known specialist, Dr. S.-G. Sciences, professor of the Department of Horticulture of the Ukrainian National University of Science and Technology, Volodymyr Mykolayovych Mezhenskyi, which were printed with the help of the Ukrainian Nut Association.

A lively discussion about the benefits of a healthy diet with the use of nut products, about the scientific justification of the need and feasibility of using nut oil and flour among a variety of food ingredients, about the development of nut processing, about the formation of the ideology of the use of nut products dragged on for a long time, the regular half-hour allotted in a tight schedule quickly flew by rector to sign the Memorandum, then some more time.

According to the results of the meeting, two basic Departments of the University were determined for cooperation with the Nut Association - the Department of Bakery and Confectionery Technology and the Department of Fat Technology, Chemical Technology of Food Additives and Cosmetics.



At the end of the meeting, the rector of NUHT, professor, Doctor of Technical Sciences Shevchenko O.Yu. handed over one of his own monographs to the experts of the association for study - the newest textbook with a huge amount of information, which in small print barely fit on the 920 pages of the publication.

Immediately after the signing of the Memorandum, working meetings of representatives of the Walnut Association with specialists of the basic Departments took place.

At the Department of Bakery and Confectionery Technology under the chairmanship of the head of the department, Professor, Ph.D. Sausages V.M. there was a discussion of further cooperation with the professor, Ph.D. Yulia Viktorivna Kambulova and associate professor, Ph.D. Falendysh Natalia Oleksiyevna on the development of the industrial use of nut flour in the bakery and confectionery industries, the creation of appropriate nut mixes and food recipes. Samples of nut flour were handed over to the Department.

At the Department of Fat Technology, Chemical Technology of Food Additives and Cosmetics, together with the head of the department, Professor, Doctor of Technical Sciences. Tamara Tikhonivna Nosenko and Volodymyr Oleksandrovych Bakhmach, associate professor, PhD, discussed further cooperation on spreading the use of nut oil. Nut oil samples were handed over to the Department.

The parties agreed on the regulations for further meetings and the development of cooperation.

And for horticultural enterprises of the nut industry, for nut growers, it is also the development of more in-depth processing of nuts, diversification of nut raw exports and nut production (growing) in Ukraine in general, reshaping of the world vision of Ukraine as a supplier of raw walnuts and hazelnuts. Ukraine should not remain a raw nut center on the world nut map.

 

The implementation of these tasks today requires the cooperation of efforts of Ukrainian nut farmers, processors and constant communication together.
